Chef Joe Solomon Mmmm Lobster!!! Can’t you just imagine the succulent taste of this moist and meaty shellfish? It’s hard to believe that at one time, circa the early 19th century that lobster was so plentiful that it was used for fish bait. Pretty hard to believe now that we know better how tasty and popular it is. Its ever-growing popularity has since created its demand and subsequently its market value. With a jointed body and limbs, this king of the crustacean family is covered with a hard shell. The most prevalent variety is the Maine lobster also known as the American lobster with five pairs of legs, the first of which form large and heavy claws containing a good amount of meat.
